Healthy and Easy Microwave Potato Chips








Let's talk about food. Food is so amazing. I totally believe that food is fuel. But I've almost always had an addiction to it. I overeat. I eat too much of the bad stuff. And that's really been my problem for several years. I workout hard every week. I'm at the gym at least 4 times a week. But what I put in my mouth at meal times was just awful. No wonder I never really saw my weight going down.

For the past few weeks I've been really counting my calories again. But not even just calorie counting. I've been cleaning up what I'm eating. I don't want to eat just 1500 calories. I want to eat 1500 calories of food that is going to nourish my body and fuel it. I don't want to waste my calories on junk. I've been weighing my food on a digital food scale and that has opened my eyes so much to how much I was truly overeating before.

But I love crunchy snacks. Enter in the healthy and easy microwaved potato chip. The terribly oily and salty potato chips from a bag are a thing of the past for me. These chips are SO EASY. They are so quick to whip up, are crunchier and more satisfying than the bagged kind, are cheap to make, and you can do so many different flavors.

Let me show you how!



First choose a potato and wash that thing good. A vegetable scrub brush is your friend! Hey! And don't forget to weigh it with your food scale!



Next, slice the potato nice and thin. I don't have a fancy schmancy slicer. I got mine for like ten bucks at Walmart. It works nicely though.




Lay out a piece of parchment paper and arrange the sliced potato in a single layer. Try not to overlap the slices like I did a bit here. I had a bit more potato than I had parchment paper.



Season your potatoes! I used A1 Sweet Mesquite dry rub seasoning. A serving was two teaspoons and 15 calories. I used only one teaspoon, so 7.5 calories for my seasoning. I really wanted barbecue chips tonight and I could not find any barbecue seasoning without salt. If you know where I can find some let me know! I really want to not use any salt. I've made garlic flavored chips, onion flavored, even cinnamon and sugar. Just sprinkle some of your favorite flavors.



Place the parchment paper in the microwave. You can put it on a plate, but I like doing it without the plate because I feel it's just as easy to slip the parchment paper into the microwave.  Microwave for five minutes and then check your potato chips. If they aren't crispy yet, continue microwaving in one minute increments to check if they are done. If you let them cook too long they will burn. You will know when they are done because they won't have any moisture left in them and they will crack and break like your classic potato chip.

And then enjoy!

These are so yummy and don't make me feel gross like store bought chips. And they aren't as time consuming as oven baked chips. I also do this with sweet potatoes and they are so yummy.
